Yogurt Soup

(Yayla Çorbası)

One of the most favorite Turkish soups.  Super delicious.

Turkish; Yayla Çorbası

Ingredients

  • 2 Tbsp rice
  • 4 Tbsp yogurt
  • 1 Tbsp flour
  • 1 egg
  • 1 tsp dried mint
  • 1 tsp salt
  • 1/2 tsp black pepper (grounded preferred)
  • 1/2 tsp red pepper flakes

Directions

1.  Wash and drain the rice in order to get rid of the residue.  In a large saucepan, boil rice with 2 cups of water. 

2.  In a bowl mix yogurt, flour and egg.  Get a homogeneous thickness.   From the saucepan add 1/8 cup of water to the bowl and stir well.  Then add this mixture to the saucepan, continue stirring.

3.  Add 2 cups of water to saucepan.  Bring to a boil, stirring constantly.  Finally add mint, salt and black pepper.  If soup is too thick, thin with a little stock or water. You can add some red pepper flakes just before serving.
