Stuffed Ball Squash

Giritkabak

Turkish; Girit Kabak Dolması

These tiny ball squash are more tasty than they seem.  It has a great flavor.

Ingredients

  • 8 ball squash
  • 1/2 lb ground beef
  • 1 finely chopped onion
  • 1 finely chopped tomato
  • 1 Tbsp rice
  • 1 Tbsp tomato paste
  • 1 tsp mint flakes
  • 1 tsp salt
  • 1/2 tsp pepper

Directions

1.  Wash squash well and trim the bottom ends.  Then cut the top close to stem.  Save the tops.  Scoop out the pulp.

2.  In a large bowl mix ground beef, onion, tomato, rice(rinsed), mint flakes, salt and pepper.  Stuff hollowed-out squash with this stuffing and place the tops.

3.  Place them in a saucepan.  Mix 1 cup of water with tomate paste, and pour this sauce over the squash.  If you like, you can also sparkle 1 tsp of sugar.  Cook for 25 minutes until squash are tender.
